Easy Chocolate Popsicles
Someof my favorite treats growing up were fudgesicles and strawberry shortcake popsicles. It was always a toss up on which one I would get whenever my mom let us get a treat from the ice cream truck.
These homemade fudgesicles are even better than the original in my opinion! They’re rich, creamy and ultra chocolaty. If you’re a chocolate lover, you’re going to love the decadent fudgy taste. Every bite is absolute perfection!
These are also so easy to make and the perfect summer treat for the kids to help with. They only take 15 minutes of prep time and then they’ll just need to harden in the freezer. Keep them stocked in the freezer all summer long for a refreshing and delicious sweet treat to cool off with on a hot afternoon!

Ingredients for Homemade Fudgsicles
- Milk: Using whole milk will result in a richer flavor, due to it’s higher fat content. It’s worth the splurge in my opinion, but you could try using low-fat milk to cut back on calories if you prefer.
- Heavy cream: This also adds to the rich flavor and creamy texture.
- Sugar: Granulated sugar is the sweetener used in this fudge popsicle recipe.
- Chocolate chips: This gives it that beloved chocolaty taste. I prefer semi-sweet chocolate chips over dark chocolate, as they aren’t as bitter and are a bit more subtle.
- Cocoa powder: Another contributor to the fudgy chocolate flavor. Since we’re adding sugar to sweeten the popsicles, I recommend using unsweetened cocoa powder.
- Vanilla: Using a high quality pure vanilla extract will make a difference in the overall taste.
- Salt: A pinch of salt balances out the other flavors so nicely and adds a slight saltiness that compliments the sweetness from the chocolate.

How to Make Fudge Popsicles
Only 15 minutes of prep time needed to prepare these easy fudge popsicles!
- Simmer. Bring the milk, cream, sugar and cocoa powder to a simmer in a large sauce pan. Once simmering, immediately remove from the heat.
- Blend. Add the chocolate chips into the bottom of a blender. Then pour the hot milk mixture over the top and let sit for a few minutes to melt the chocolate. Pour in the vanilla and sea salt, then blend the mixture until it’s smooth.
- Pour. Next pour the chocolate mixture into a popsicle mold and freeze for about 30 minutes to harden a bit. Then remove from freezer and add a popsicle stick in the center of each. Place back in freezer and freeze overnight, or until completely frozen.
- Release. When ready to enjoy, run warm water on the bottom of the popsicle mold to release the pops. You can also let them sit on the counter for a few minutes to loosen up so that they easily release on their own.

Fudgesicle Variations
Check out a few easy ideas below to take these chocolate popsicles up a notch!
- Dip in melted chocolate, then sprinkle with chopped nuts or flake sea salt.
- Sprinkles or shredded coconut would also be fun additions once dipped in chocolate.
- Add a spoonful of peanut butter to the mixture before blending.
- Blend in a frozen banana for chocolate banana flavor.
Storing Tips
These fudgesicles will keep in the freezer for about 1 to 2 months, although they never last that long in our house! When ready to enjoy, simply run warm water over the bottom of the mold to release or let sit on the counter to soften a bit before removing.
FAQs
How long do they take to freeze?
Usually about 4-6 hours in the freezer, although I like to make them the day before and let them harden overnight. That way you’ll know they’ll be completely frozen when ready to enjoy the next day!
How do I get the popsicles out of the mold?
My favorite trick for releasing popsicles is to run the bottom of the mold under warm water for about 30 seconds to a minute. Works every time!
Can I make this recipe without a popsicle mold?
It’s definitely easier to use a mold, but if you don’t have one, try using a muffin tin! Pour the milk mixture into each muffin cup then freeze for about 30 minutes. Add the popsicle sticks to the center of each cup, then freeze again until hard.
Are fudgesicles gluten-free?
You bet! All of the ingredients used in this recipe are naturally gluten-free, making this a fabulous treats for those with gluten sensitivities.
Are they vegan?
Our recipe contains both milk and heavy cream, so no, these fudge popsicles aren’t vegan.
To make dairy-free vegan fudgesicles, you could experiment by swapping the milk for a non-dairy nut or oat milk, as well as replacing heavy cream with full-fat coconut milk or coconut cream (the flavor will change). You’ll also want to make sure that the chocolate chips you use do not contain milk.
I haven’t tried making a vegan version, so let me know how it goes if you give it a shot!
